Paleo Beef Stew

Ingredients:
2 lb beef chuck roast (cut 1” pieces)
4 cups beef bone broth
1 large onion chopped
2 large carrots peeled and cut into rounds
1 lb turnips peeled and cubed
3 stalks celery chopped
3 cloves garlic minced
2 tbsp olive oil
2 tbsp tomato paste
2 tbsp arrowroot flour
2 sprigs fresh thyme
1 sprig fresh rosemary
2 bay leaves
Sea salt and pepper
Optional: fresh coriander
Method:
1. Heat a large pot to medium and add oil. Season your beef with salt and pepper before adding to the pan and seasoning on all sides until golden (2-3 minutes per side).
2. Remove your seared beef from the pot and set to the side. Add more oil to the pot then add the onions, carrots, and celery and cook (3-5 minutes). Add in the garlic and cook until fragrant (1-2 minutes).
3. Add the beef back to the top along with the tomato paste and arrowroot flour. Stir to coat the beef and veggies.
4. Stir in the broth, scraping the browned bits at the bottom of the pot. Add the rosemary, thyme and bay leaves and season with salt and pepper. Bring to a boil before lowering the heat and simmering at medium-low until the beef is tender (45 minutes). Add the turnips and continue to simmer until tender (35 minutes).
5. Discard the thyme, rosemary and bay leaves. Garnish with coriander and serve.
